Chia microgreens are nutrient-dense young shoots harvested within 7 to 12 days of germination. Unlike mature chia seeds, which are prized for their omega-3 fatty acids, the microgreen stage significantly boosts antioxidant diversity, vitamin C (up to 17 times more than the seed), and bioavailable minerals like calcium and magnesium.
